摘要
对苹果渣基础研究从化学成分及生物活性方面加以论述;苹果渣可以用来生产蛋白饲料、果胶、膳食纤维、柠檬酸、苹果白兰地、酶制剂等。苹果渣仍缺乏系统深入的研究,其高附加值产品亟待开发。
Advances in the research of apple pomance were reviewed from the aspects of chemical constituents and bioactivities. Many products could be developed from apple pomance,such as dietary fiber, feedstuff,pectin,citric acid,apple brandy and enzyme preparations. However,systematic and thorough reseach is still needed in this field,high value-added products are urgently needed to be developed.
