黑芝麻色素的光谱吸收特点及其FT-IR分析 被引量:4

摘要 黑芝麻色素属于天然黑色素系列,其组成与结构不同于动物来源色素,其结构至今尚不明确。通过采用碱性体系提取和多步纯化获得黑芝麻素检测样品,对其紫外可见吸收进行测定,发现了275 cm-1- 280 cm-1处黑色素特有的吸收平台,通过对其FT—IR图谱分析,推测其结构中不含噻嗪环,黑芝麻色素是属于吲哚类色素,含有羧基和酚羟基。 Melanin in Black Sesame is a kind of natural melanin. Its composition an structure is different from melanin derived from animals, and its structure is not confirmed till now. Melanin in black sesame for analysis is derived by alkali extraction an multi -purification process. Special adsorption band, 275 - 280 cm^-1, is found by the UV adsorption curve. We can get the conclusion by FT - IR, that melanin in black sesame is a kind of indole pigment, and it contains hydroxyl group connected to benzene and carboxyl group.
