The effect of carriers on photostability of monascus red pigments

摘要 水溶性蛋白类载体为目前市场销售红曲红产品中主要载体,可使红曲红色素光稳定性由35.6%提高到54.6%,海藻酸钠、明胶和β-环状糊精作载体可使红曲红色素光稳定性由35.6%分别提高到66.5%、66.3%和60.6%。 The carrier of red monascus pigments on sell was resolvable-protein, which increased photostability of red monascus pigments from 35% to 54. 6%. The carrier of sodium alginate gelatin and 13-cycle dextrin increased photostability from 35% to 66. 5%, 66. 3% and 60. 7% respectively, 90%, 89. 4%, and 73.4% higher than on carrier.
