摘要
利用青春双歧杆菌在蛋白类载体 、 、 中添加蔗糖和促生长因子等 ,接种 2 %1∶ 1的嗜热链球菌与保加利亚乳杆菌混合发酵剂 ,5 %的青春双歧杆菌发酵剂 ,经 38~ 39℃前发酵 4.5~ 6 .0 h,终点判定 p H值为 4.6~ 4.8,°T为 70~ 80 ,在 2~ 5℃冰箱中进行后发酵 12~ 16 h,可得到两种组织状态、风味、口感优良的特定功能保健饮品。
B.adolsecentis was used in protein carrier Ⅰ?Ⅱ?Ⅲ,sucrose and proliferative factors was acquired,two percent Sthermophilus and L.bugaricus(1∶1) and five percent B.adolsecentis was inoculated.After the earlier stage fermentation with 4.5~6.0 h at 38~39℃,the end was judged when PH was 4.6~4.8 and °T was 70~80.Then after the later stage fermentation with 12~16 h at 2~5℃,we could get two kinds of health care drink with special function and special flavour.
