摘要
利用某些酵母菌对不同碳源的利用能力和速度不同的原理,对酵母菌进行筛选试验,选出1株只利用葡萄糖、麦芽糖而不利用低聚异麦芽糖的优良酵母菌14号,并对该菌的特性进行了研究。利用该菌株的生长和发酵过程,可全部除去低纯度低聚异麦芽糖产品中的葡萄糖和麦芽糖,使最终低聚异麦芽糖产品纯度达99%以上。
On the principle of having different capacity and speed that some saccharomycetes consume different carbon resources, a good strain No.14 which can only consume glucose and mahose but not consume isomahooligosaceharide was screened from saccharomycetes, and its characteristics were studied. Glucose and maltose in isomahooligosaceharide products could be consumed during saccharomycetes reproduction and fermentation, and last purity of isomahooligosaccharide products should be over 99%
