摘要
本文是对30名学龄前儿童补充不同铁锌含量的饮料前后所进行的代谢实验并测定所收集的粪、尿及食物中铁、锌及其它营养素的含量。结果发现:铁锌离子总量达32mg,铁锌比为3.14∶1时,铁对锌的吸收利用有抑制作用。铁锌离子总量为27mg,铁锌比为1∶1时,锌的吸收利用最好。 因此,在强化食品的研制过程中,需注意强化的铁锌剂量和比例,不要造成太大的差异,更不要过多地单纯加铁,最好是能使最后的铁锌比达到1∶1。
Metabolic experiments were done in 30 preschool children before and after the supplement of different iron and zinc containing beverages. The concentrations of iron, zinc and other nutrients in faeces, urine and food were determined. The results showed that when the total amount of iron and zinc was equal to 32 mg and the ratio of them was 3.14 to 1 the absorption and availability of zinc declined.Therefore, during the process of manufacturing the fortified food, attention must be paid to the quantities and the optimal range of Fe/Zn ratio.It is better that the ratio of iron and zinc equals 1 to 1.
