红曲霉的应用历史悠久,红曲霉产生的生理活性物质得到人们广泛研究。文中从专利、研究报告、生产应用几方面综述了红曲霉在国内外的研究状况,并分析其应用及市场开发前景,提出红曲保健食品市场亟待进一步开发。
Monascus has been used in food fermentation for a thousand year.The physiologically active substance that Monascus produced had been researched widely.It reviewed the research on monascus in internal and external according to patents,research reports and application examples in industry.And the market prospect for application was analyzed too.A conclusion was drawn that Hongqu health food should be developed more.
