摘要
本实验采用分光光度法测定十种常见果皮渣提取物的羟基自由基消除能力,并对测定结果进行了分析研究。发现常见的果皮渣提取物中含有大量抗氧化物质,它们对羟基自由基都有较强的消除能力。在所测定的十种果皮中,香蕉皮的羟基自由基消除能力最强,西瓜皮次之。
Hydroxyl radical scavenging ability of ten kinds of common slag peels were determined by spectrophotometry in laboratory experiment. It was found that Slag peels contain large quantity of antioxidant substances with some certain capability of hydroxyl radical scavenging. Among the ten kinds of slag peels, the hydroxyl radical scavenging ability of banana skin is the strongest, and that of the watermelon skin comes second.
