摘要
通过鲜牛奶经纳米超高压均质机处理、取样,测定大肠菌群菌落数和细菌总数。结果表明,动力作用对牛乳中大肠菌群有致死效果;细菌总数最多可以降低3个对数单位。实验初步证实了动力杀菌作为一种冷杀菌方法的可行性。
Raw milk is handled by the Ultra-high Pressure Millimicron-level H omogenizor, and then sampled. The number of coliform colony and total bacterial count were analyzed. The results showed that dynamic actions resulted in the dea th of coliform bacteria, and the total plate counts of milk reduced to 3-log. T he feasibility of dynamic pasteurization was initially testified.
