摘要
红茶是世界上产量最高、消费区域最广、贸易量最大的茶类。红茶为全发酵茶,一般分为三大类,包括工夫红茶、小种红茶、红碎茶。工夫红茶作为我国最具特色和产量最大的红茶种类,它的品质特征具体表现为“色、香、味、形”,也是构成茶叶感官品质组成的重要因子。“祁红”“川红”“滇红”并称中国三大工夫红茶,不同产地的工夫红茶品质特征成分差异较大。围绕我国的三大工夫红茶,简要介绍3种红茶的发展情况,重点针对茶中香、味、色、形的品质特征展开分析与探讨,以期为今后工夫红茶品质相关研究以及新产品的开发提供一定的理论支撑与参考。
Black tea is the category with the highest yield,the widest consumption area,and the largest trade volume in the world.Black tea,fermented tea,is generally divided into three categories including congou black tea,small race black tea and black broken tea.Congou black tea is the most characteristic and the largest yield of black tea in China.Its quality characteristics are manifested as color,aroma,taste and shape,which is also an important factor in the composition of tea sensory quality.Keemun black tea,Sichuan black tea and Yunnan black tea are known as the three major congou black teas in China.The quality characteristic components of congou black tea from different producing areas are quite different.The development of three kinds of black tea in China is briefly introduced,and the quality characteristics of aroma,taste,color and shape in tea are analyzed and discussed,in order to provide some theoretical support and reference for the future research on the quality of black tea and the development of new products.
