不同贮存时间对中高温大曲理化指标的影响

摘要 为探究不同贮存时间中高温成品曲理化指标的变化规律,进一步分析贮存时间对中高温成品曲理化指标的影响,本研究对不同贮存时间中高温成品曲的14个理化指标进行检测分析,结果表明:不同贮存时间中高温成品曲中水分、酸度、氨基酸态氮、还原糖、K元素、Mn元素、Ca元素、酸性纤维酶和中性纤维酶差异显著,而淀粉、Mg元素、Fe元素、糖化力和中性蛋白酶无显著变化;主成分分析表明贮存0~8 d变化较大的指标为酸度,贮存45 d时变化较大的指标为中性纤维酶和Mn元素,而在贮存90 d时变化较大的指标包括还原糖、水分和酸性纤维酶等;中高温大曲理化指标与贮存时间的最佳回归模型为:水分+酸度+还原糖+Mn+中性纤维酶。 In order to explore the change law of physicochemical indexes of medium-high temperature Daqu during storage,and to an-alyze the effect of storage time on the physicochemical indexes of medium-high temperature Daqu,the 14 physicochemical indexes of medium-high temperature Daqu with different storage time were detected and analyzed.The results showed that there were signifi-cant differences in moisture,acidity,amino acid nitrogen,reducing sugar,K,Mn,Ca,acid cellulase and neutral cellulase of Daqu with different storage time,while there was no significant difference in starch,Mg,Fe,saccharifying power and neutral protease.Prin-cipal component analysis showed that acidity changed greatly from day 0 to day 8,neutral cellulase and Mn changed greatly after 45 days of storage,and reducing sugar,moisture and acid cellulase changed greatly after 90 days of storage.The best regression model between physicochemical indexes and storage time of medium-high temperature Daqu:moisture+acidity+reducing sugar+Mn+neutral cellulase.
