摘要
为了探究贵州清镇辣椒的品质差异,采用数据统计分析、相关性分析、隶属函数分析和聚类分析对其品质进行综合评价。辣椒素含量变异系数最大,为64.65%。还原糖含量变异系数最小,为12.55%。辣椒红素含量与粗脂肪含量呈极显著负相关,与二氢辣椒素含量呈显著负相关,与粗纤维含量呈显著正相关;粗脂肪含量与粗纤维含量呈极显著负相关,与辣椒素含量呈显著正相关,与二氢辣椒素含量呈极显著正相关;粗纤维含量与水分含量呈极显著负相关;辣椒素含量与二氢辣椒素含量呈极显著正相关。通过隶属函数分析,综合品质排名最佳的样品为黔辣13号,平均隶属函数值为0.66。聚类分析将44个辣椒品种分为4个类群。
In order to explore the quality differences of pepper in Qingzhen,Guizhou,data statistical analysis,correlation analysis,membership function analysis,and cluster analysis were used to comprehensively evaluate its quality.The variation coefficient of capsaicin content was the highest at 64.65%and the variation coefficient of reducing sugar content was the smallest at 12.55%.Capsanthin content was very significantly negatively correlated with crude fat content,negatively correlated with dihydrocapsaicin content,and positively correlated with crude fiber content.Crude fat content was very significant negative correlation with crude fiber content,significant positive correlation with capsaicin content,and very significant positive correlation with dihydrocapsaicin content.There was very significant negative correlation between crude fiber content and water content content.There was very significant positive correlation between capsaicin content and dihydrocapsaicin content.Through membership function analysis,the sample with the best overall quality ranking was Qianla 13,with an average membership function value of 0.66.Cluster analysis divided 44 pepper varieties into 4 groups.
