食品化学教学中课程演示实验的设计

摘要 演示实验是工科理论课教学中重要的辅助教学手段和实验课教学的重要补充,它对于加强学生对理论课知识的理解、增加课程的吸引力,激励学生、培养他们的创造思维具有重要意义。作为专业基础课和核心课程,食品化学在食品科学与工程专业本科教学中举足轻重,本文结合作者多年的教学实践,设计了5个演示实验,供各位同行分享。 Experimental demonstration is the important aided supplementary means in teaching of the theory curriculum for engineering disciplines.It has very important significance for enhancing the understanding capacity of the students for the theory,increasing the attraction of the course,and motivating the students and their innovation ideas.Food Chemistry is a specialized core course and plays key role in Food Science and Engineering.In order to teach this course well and effectively,we designed five demonstration experiments for the course.
