摘要
为研究鸭蛋、鹅蛋、鹌鹑蛋、鸽蛋及鸡蛋蛋黄所含脂质的差异,采用超高效液相色谱串联质谱对5种禽蛋黄进行脂质组学分析。结果显示,共检测到6类、26个亚类的1303种脂类。鸭与鸽的蛋黄、鸡与鹌鹑的蛋黄脂质成分相近,鹅蛋与其他蛋黄脂质成分差异最大。鸡蛋黄鞘脂含量最丰富,鹌鹑蛋黄的甘油磷脂含量最高,鸽蛋黄甘油酯含量最低,鸭蛋黄及鸽蛋黄的甘油二酯与甘油三酯含量比值最高,鸭蛋黄及鸽蛋黄中ω-3多不饱和脂肪酸含量较高。与鸡蛋黄相比,其他禽蛋有33个脂质存在极显著差异(P<0.05、VIP≥1并且FC≥10或FC≤0.1)。研究表明,不同禽蛋黄含有的脂质存在显著差异,当对比甘油酯比例及ω-3多不饱和脂肪酸含量时,鸭蛋黄和鸽蛋黄较鸡蛋黄、鹅蛋黄、鹌鹑蛋黄有优势。
In order to study the differences of lipid content in egg yolk of duck egg,goose egg,quail egg,pigeon egg and chicken egg,ultra performance liquid chromatography-tandem mass spectrometry was used to analyze the lipid omics of five kinds of egg yolk.The results showed that 1303 kinds of lipids were detected in 6 classes and 26 subclasses.The lipid composi⁃tion of duck and pigeon yolk was similar,chicken and quail yolk was similar,and the difference between goose and other yolk lip⁃id composition was the largest.The yolk of chicken had the richest sphingolipid content,the yolk of quail had the highest glycerol phospholipid content,the yolk of pigeon had the lowest triglyceride content,and the ratio of the triglyceride content of duck egg yolk and pigeon yolk was the highest,the content of omega-3 polyunsaturated fatty acids in duck egg yolk and pigeon egg yolk was higher.There were 33 lipids in other egg yolks that were significantly different from chicken egg yolks(P<0.05,VIP≥1 and FC≥10 or FC≤0.1).Studies had shown that the lipid content of different poultry egg yolks was significantly different.Duck egg yolks and pigeon egg yolks had an advantage over chicken egg yolks,goose egg yolks and quail egg yolks when comparing triglyc⁃eride ratio and omega-3 polyunsaturated fatty acid content.
