元宝枫籽油凝胶的制备及表征

摘要 油脂凝胶化是固化油脂的一种健康方法,可以作为传统塑性脂肪的代替品。元宝枫籽油是新型的功能性植物油脂,以元宝枫籽油为基料油,用小烛树蜡、蜂蜡、单甘酯和复配凝胶剂来制备元宝枫籽油凝胶,对其性质进行表征。研究发现:复合元宝枫籽油凝胶的最佳制备条件是凝胶剂添加量为9.7%,单甘酯与蜂蜡复配比为6∶4,加热温度为81℃,加热时间为39 min;将复合油凝胶与单一油凝胶作比较,硬度由364 g改善到276 g,持油率也增加至99.69%。研究表明,复合油凝胶针状结构相对密集,晶体尺寸较大,截留液态油能力较强,硬度、胶质口感、氧化稳定性均有所改善。 Gelation of oils and fats is a healthy way to solidify oils and fats,and can be used as a substitute for traditional plastic fats.Acer truncatum seed oil is a new functional vegetable oil.In this study,Acer truncatum seed oil was used as base oil,and candle wax,beeswax,monoglyceride and compound gel were used to prepare Acer truncatum seed oil gel,and its properties were characterized.Results the optimum preparation conditions of compound Acer truncatum seed oil gel were as follows:the amount of gel was 9.7%,the ratio of monoglyceride to beeswax was 6∶4,the heating temperature was 81℃,and the heating time was 39 min.Compared with single oil gel,the hardness of composite oil gel was improved from 364 g to 276 g,and the oil holding rate also increased to 99.69%.It is concluded that the needle-like structure of composite oil gel is relatively dense,the crystal size is larger,the ability to intercept liquid oil is stronger,and the hardness,gum taste and oxidation stability are improved.
