摘要
文章旨在探究添加不同水平的烟酸对肉牛生长性能,屠宰性能及肉品质的影响。试验将80头健康、日龄、体况[(400±10)kg]相近的西门塔尔肉公牛随机分成4组,每组20个重复,每个重复1头西门塔尔公牛,试验1组饲喂基础日粮(对照组),试验2、3、4组分别添加600、800、1000mg/kg微囊包被烟酸,预饲期10d,试验期90d。结果表明:(1)试验3、4组的平均日增重较试验1组分别显著提高16.1%、15.1%(P<0.05),其料重比较试验1组分别显著降低21.1%、22.4%(P<0.05);(2)试验3、4组的屠宰率、眼肌面积较试验1组分别显著提高12.2%、12.6%、12.2%、11.9%(P<0.05),眼肌面积背膘厚度较试验1组分别显著降低24.4%、20.3%(P<0.05);(3)试验3、4组的粗蛋白质、大理花纹、pH_(24 h)值较试验1组分别显著提高21.5%、20.1%、23.1%、22.7%(P<0.05),其剪切力较试验1组分别显著降低13.8%、15.2%(P<0.05)。综上所述,添加不同水平的微囊包被烟酸均可以提高肉牛生长性能和屠宰性能,改善肉品质,以800mg/kg添加较适宜。
To investigate the effects of adding different levels of niacin on the growth performance,slaughter performance,and meat quality of beef cattle.In the experiment,80 healthy Simmental beef bulls with a body weight of(400±10)kg and a similar age and body condition were randomly divided into four groups.Each group had 20 replicates.Each Simmental bull was a repeat group.The first group was fed with basic diet(control group).The second,third and fourth groups were respectively added 600,800 and 1000 mg/kg microencapsulated niacin.The pre experiment lasted for 10 days and the test period lasted for 90 days.The results showed that:(1)The average daily weight gain of Group 3 and Group 4 was significantly increased by 16.1%and 15.1%compared to Group 1(P<0.05),and their material weight was significantly reduced by 21.1%and 22.4%compared to Group 1(P<0.05);(2)The slaughter rate and eye muscle area of groups 3 and 4 were significantly increased by 12.2%,12.6%,12.2%,and 11.9%compared to group 1(P<0.05),respectively.The thickness of back fat in the eye muscle area was significantly reduced by 24.4%and 20.3%compared to group 1(P<0.05);(3)The crude protein,Dali pattern,and pH_(24 h) values of Group 3 and Group 4 were significantly increased by 21.5%,20.1%,23.1%,and 22.7%(P<0.05)compared to Group 1,respectively,and their shear forces were significantly reduced by 13.8%and 15.2%(P<0.05)compared to Group 1.In summary,adding different levels of microencapsulated niacin can improve the growth performance and slaughter performance of beef cattle,improve meat quality,and adding 800 mg/kg is more suitable.
