摘要 探索将大型精密仪器设备光学微流变仪应用于食品化学本科实验教学,开阔视野激发兴趣,锻炼动手实践能力,培养科学创新精神。实验以大豆分离蛋白为材料,利用光学微流变仪无损、快速、精确测试手段,生动展现凝胶形成过程,探索生物大分子运动规律,并结合实际案例,详细分析大分子运动与凝胶化过程的紧密联系。实验设计尝试模拟一次科研探索过程,涵盖文献查阅、自主设计、样品制备、测试与分析、报告及总结等环节,为4~5人小组实验,实验过程科学探索性强。实验设计有助于培养学生的自主学习和实践能力,提高科学分析问题能力。 The application of optical micro-rheometer,a large-scale instrument,in Food Chemistry Experiment teaching for undergraduates was investigated,which could broaden the horizon,inspire the interest,exercise the practical ability and cultivate the scientific innovation spirit.In the present experiment,soybean protein isolate was used to demonstrate the process of gel formation and explore the laws of macromolecules with a nondestructive,rapid and accurate measurement by optical micro-rheometer.Simultaneously,practical cases were used to describe the relationships between the motion of macromolecules and the process of gelation.The present experiment design attempted to simulate a scientific research and exploration process,including literature review,independent designation,sample preparation,testing and analysis,as well as report and summary.The experiment process was conducted in groups of 4 or 5 students,showing strong scientific exploration spirit.In addition,this experiment designation was helpful to cultivate the independent learning and practical ability of undergraduates and improve their abilities of scientific analysis.
