摘要
本试验旨在研究地方品种莱芜黑兔的肌肉品质特征,确定最佳屠宰日龄。选取35日龄莱芜黑兔30只,随机分为3组,每组5个重复,每个重复2只,分别于75、84、115日龄进行屠宰。测定分析生产性能及肌肉品质的相关指标。结果表明:1)莱芜黑兔在75和84日龄屠宰的料重比显著低于115日龄(P<0.05)。2)肌肉的红度(a^(*))值随着屠宰日龄的增加而显著增加(P<0.05),75和84日龄的黄度(b^(*))值显著高于115日龄(P<0.05);84和115日龄的滴水损失显著低于75日龄(P<0.05)。3)肌肉中干物质含量随着屠宰日龄增加而增加,且115日龄显著高于75日龄(P<0.05);肌肉中烟酸含量随着屠宰日龄增加而显著减少(P<0.05)。4)84和115日龄肌肉中肌红蛋白含量显著高于75日龄(P<0.05);肌肉中黑色素含量在不同屠宰日龄间无显著差异(P>0.05)。5)肌肉中多不饱和脂肪酸二十碳二烯酸、二十碳三烯酸、二十碳五烯酸和二十二碳二烯酸含量在84日龄显著高于115日龄(P<0.05),且均在84日龄时最高;鸟嘌呤含量在84和115日龄显著低于75日龄(P<0.05);腺嘌呤含量在84日龄显著低于75、115日龄(P<0.05)。综合考虑肌肉品质及潜在商业价值,莱芜黑兔屠宰日龄以84日龄为宜。
The purpose of this experiment was to study the muscle quality characteristics of local breed Laiwu black rabbit and determine the best slaughter age.A total 30 of thirty⁃five⁃day⁃old Laiwu black rabbits randomly divided into 3 groups with 5 replicates in each group and each replicate contained 2 rabbits.The rabbits was slaughtered at 75,84 and 115 days of age.Determination and analysis of relevant indicators of production per⁃formance and muscle quality.The results showed as follows:1)the feed/gain in 84 and 75 days of age was significantly lower than that in 115 days of age(P<0.05).2)There was a significant increase in meat rednes⁃sue value(P<0.05),the yellowness value in 75 and 84 days of age was significantly higher than that in 115 days of age(P<0.05).Drip loss ratio in 84 and 115 days of age was significantly lower than that in 75 days of age(P<0.05).3)The content of dry matter in muscle was increased with the increase of slaughter age,and 115 days of age was significantly higher than 75 days of age(P<0.05).There was a significant decrease in the content of nicotinic acid(P<0.05).4)The content of myoglobin in 84 and 115 days of age was significantly higher than that in 75 days of age(P<0.05).There was no significant difference in the content of melanin at different slaughter ages(P>0.05).5)The contents of polyunsaturated fatty acids eicosadienoic acid,eicosa⁃trienoic acid,eicosapentaenoic acid and docosadienoic acid in muscle in 84 days of age were significantly high⁃er than those in 115 days of age,and all reached the highest in 84 days of age(P<0.05).The content of gua⁃nine was significantly lower in 84 and 115 days of age than 75 days of age(P<0.05).And the content of ade⁃nine in 84 days of age was significantly lower than that in 75 and 115 days of age(P<0.05).Comprehensive consideration of muscle quality and potential commercial value,84 days of age of slaughter age is appropriate for Laiwu black rabbits.
