摘要
选8、10周龄的蛋用罗曼鸡、康达尔黄羽肉鸡、石岐杂鸡、白耳鸡、泰和乌骨鸡5个品种,测定胸肌肌苷酸和脂肪酸含量。结果表明:1随着周龄的增长,肌肉肌苷酸含量呈增长趋势,且以泰和乌骨鸡肌肉肌苷酸含量为最高。2随着周龄的增长,5个鸡品种的肌肉脂肪酸含量无一致的规律性变化,但不饱和脂肪酸相对含量均高于饱和脂肪酸;泰和乌骨鸡肌肉不饱和脂肪酸相对含量呈减少趋势,饱和脂肪酸相对含量呈增加趋势,其他4个鸡种的变化趋势与其相反。
The comparison of inosinic acid and fatty acid contents of muscle in five different chicken breeds at 8 and 10 weeks was conducted. The results show that: ① With aging, the inosinic acid contents in all chicken breeds increased, and the inosinic acid contents in Silky were the tallest. ② With aging, the variety of fatty acids of muscle in all breeds showed no consistence, but the unsaturated fatty acid content was taller than the saturated fatty acid. The unsaturated fatty acid content in Luoman chickens, Kangdaer yellow-feather meat chickens, Shiqiza chickens and white-ear chickens increased, and the trend of saturated fatty acid in those four breeds decreased, while the trends in Silky were opposite.
