摘要
全国“三大名鸡”之一的卓资熏鸡是内蒙古卓资县的传统名食,其在加工、运输、贮藏、销售等环节中容易受微生物污染而发生腐败变质。首次利用16S rRNA高通量测序技术对卓资熏鸡腐败过程中致腐菌群组成及多样性进行研究,发现2个绝对优势的致腐菌门:厚壁菌门(Firmicutes)和变形菌门(Proteobacteria);4个绝对优势的致腐菌属:不动杆菌属(Acinetobacter)、葡萄球菌属(Staphylococcus)、芽孢杆菌属(Bacillus)、未经培养的肠杆菌属(Uncultured Bacterium f Enterobacteriaceae)。同时发现熏鸡腐败过程中致腐菌群结构、组成及功能会发生动态变化,呈现一定的演替规律。为熏鸡腐败机理的研究奠定了基础,也为后期靶向抑制食物腐败及延长货架期提供理论依据。
Zhuozi smoking chicken,one of the“three famous chickens”in China,is a traditional famous food in Zhuozi County,Inner Mongolia Autonomous Region.It is prone to microbial contamination and spoilage in processing,transportation,storage and sales.In this study,we analyzed the composition and diversity in Zhuozi smoking chicken at the first time by 16S rRNA high-throughput sequencing technology.Two absolutely dominant bacterial phylum(Firmicutes,Proteobacteria)were found.At the genus level,4 dominant genera were detected(Acinetobacter,Staphylococcus,Bacillus,Uncultured Bacterium f Enterobacteriaceae).At the same time,it was found that the structure,composition and function of spoilage bacterial community would change dynamically during the spoilage process of smoked chickens,presenting a certain succession rule.Therefore,this study could provide reference for the study of spoilage mechanism and provide theoretical basis for the later targeted suppression of food spoilage and shelf life extension.
