摘要
食品安全事关人民群众的身体健康与生命安全,是重要的民生工程,切实捍卫人民“舌尖上的安全”,防范与化解食品安全风险成为时代使命。当主流的食物供给体系遭遇严重的信任危机之时,替代性食物体系作为策略选择应运而生,农夫市集作为公众积极规避食品安全风险的一种消费选择,从“农消面对面”的消费实践、“食在当地食在当季”的消费理念、“场域空间”的关系延伸与消费体验等维度,生动展现了农夫市集这一新型的消费图景。以S市农夫市集为例,通过深度访谈以系统剖析各行为主体的行动策略,并探讨这一行动背后的深层逻辑机理。研究发现,农友以“把我们当成自己人”为策略,在理念共识下与集友双向奔赴,市集则作为双向筛选与信任背书的中介纽带,多元主体参与其中的行动策略即构建信任共同体。剖析食品安全风险规避的逻辑机理,即以“食品短链”为理念,藉由面对面的交流互动注入了情感能量并重构食物生产者与消费者的情感联结,信任重塑作为消解风险的路径,进而给予公众如何规避食品安全风险以经验性阐释与实践启示。
Food safety is related to people’s health and life safety;as an important livelihood project,effectively safeguarding the people’s“tongue safety”,preventing and resolving food safety risks have become the mission of our time.When the mainstream food supply system suffers from a serious trust crisis,alternative food systems emerge as a strategic choice.The farmer market is a consumption choice for the public to actively avoid food safety risks.Practices of“farming and consumption face to face”,the consumption concept of“eating locally and eating in season”,the relationship extension of“field space”and consumption experience,etc.vividly show the new consumption picture of the farmer market.Taking the farmer’s market in S City as an example,this paper systematically analyzes the action strategies of various actors through in-depth interviews,and explores the deep logic mechanism behind the action.The study found that with the strategy of“treating us as one of your own”,farmers go both ways with the group of friends under the concept consensus,and the market acts as an intermediary link of two-way screening and trust endorsement.The action strategy of multiple subjects participating is to build a trust community.The study analyzes the logical mechanism of food safety risk avoidance,that is,based on the concept of“shortened food chain”,infusing emotional energy through face-to-face communication and interaction,rebuilding the emotional connection between food producers and consumers,and reconstructing trust as a path to eliminate risks,in order to provide empirical explanations and practical insights for the public on how to avoid food safety risks.
