软枣猕猴桃暴马丁香花果汁制备工艺及其抗氧化活性评价 被引量:1

摘要 本文通过提取软枣猕猴桃果汁、暴马丁香花精油、多糖,制成多功能型药食同源的复合饮料,研究其工艺配方及其感官评价。根据正交方法分析得出最优工艺为酶反应温度35℃,酶反应时间130 min,水与暴马丁香花液料比30:1和纤维素酶添加量0.20%。提取暴马丁香花多糖、精油和软枣猕猴桃汁制成复合饮料,利用响应面法分析得出最佳饮料配方为绵白糖含量10%、柠檬酸含量0.06%、软枣猕猴桃汁与暴马丁香花精油用量比14:1。最终根据复合饮料DPPH·的清除能力、总还原力、ABTS+·清除能力和羟自由基清除能力等评价复合饮料和暴马丁香花多糖的抗氧化性。开发了一款药食同源的复合饮料,为软枣猕猴桃和暴马丁香林副产品的开发与利用提供了实践参考依据。 In this paper,By extracting Actinidia arguta fruit juice,essential oil and polysaccharide from Syrian reticulata subp.amurensis,multifunctional compound drink with same homology of medicine and food was prepared,and its technological formulation and sensory evaluation were studied.The cellulase‑assisted extraction process of polysaccharide from S.reticulata subsp.amurensis flowers was used.According to the orthogonal method,the optimal process was obtained as follows:enzyme reaction temperature 35℃,enzyme reaction time 130 min.The liquid‑solid ratio of water to flowers was 30∶1 and the addition amount of cellulase was 0.20%.S.reticulata subsp.amurensis flower polysaccharide,essential oil and A.arguta juice were extracted to make a compound beverage.The response surface method was used to analyze the best beverage formula.The content of soft white sugar was 10%,the content of citric acid was 0.06%,and the ratio of A.arguta juice to flowers essential oil was 14∶1.Finally,the antioxidant activity of the compound beverage and S.reticulata subsp.amurensis flowers polysaccharide was judged and evaluated according to the DPPH·scavenging ability,total reducing power,ABTS+·scavenging ability and hydroxyl radical scavenging ability of the compound beverage.Promote the development and utilization of A.arguta and S.reticulata subsp.amurensis related forest by‑products.
