摘要
【目的】定量评价烟丝柔软性,丰富烟丝质量评价指标。【方法】利用质构仪的压缩模式模拟其感官评价过程,通过单因素和响应面试验优化测试参数,建立烟丝柔软性的检测方法,并基于该方法分析烟丝柔软性与卷制质量的关系。【结果】(1)烟丝柔软性可定量表征为烟丝压缩过程产生一定密度变化时的时间—应力曲线斜率,即产生一定密度变化所需应力随时间的增长快慢。(2)质构仪检测烟丝柔软性的最佳条件是:选用圆盘形探头,测前和测试速度均为2 mm/s,初始压缩高度为48 mm,压缩距离为11 mm,样品质量为8 g,该方法的日内和日间精密度分别小于4.40%和2.70%。(3)不同批次烟丝柔软性差异显著,且与烟支质量、吸阻、硬度、含末率、端部落丝量和空头剔除率呈显著或极显著正相关(P<0.05或P<0.01),与烟支含水率呈显著负相关(P<0.05)。【结论】经响应面优化的烟丝柔软性检测方法科学可靠,能够反映不同批次烟丝柔软性与卷制质量的相关性,可作为烟丝柔软性的评价方法。
[Purpose]To quantitatively evaluate the softness of cut tobacco and enrich the quality evaluation indexes of cut tobacco.[Methods]The sensory evaluation process was simulated by using the compression mode of texture analyzer,and the testing parameters were optimized through single factor and response surface test,and a detection method for the softness of cut tobacco was established.Based on this method,the relationship between softness of cut tobacco and cigarette making quality was analyzed.[Results]1)The softness of cut tobacco could be quantitatively characterized as the slope of the time-stress curve when a certain density change occurred during the compression process of the cut tobacco,that was,the growth rate of the stress required to produce a certain density change with time.2)The optimal conditions for texture analyzer to detect the softness of cut tobacco were disc probe,both pre-test and test speed were 2 mm/s,initial compression height was 48 mm,compression distance was 11 mm,and sample weight was 8 g.The intra-day and inter-day precision of this method were less than 4.40%and 2.70%,respectively.3)The softness value of cut tobacco from different batches was significantly different,and was positively correlated with weight,draw resistance,hardness,dust content,loss of tobacco from cigarette end and loose-end rejection rate of cigarette(P<0.05 or P<0.01),and negatively correlated with moisture content of cigarette(P<0.05).[Conclusion]The detection method of cut tobacco softness optimized by response surface methodology is scientific and reliable,which can reflect the correlation between the softness of different batches of cut tobacco and cigarette making quality,and can be used as an evaluation method for the softness of cut tobacco.
