摘要
为明确脱酚处理对棉籽粕消化性的影响,采用甲醇脱酚处理获得不同游离棉酚含量的棉籽粕,比较了各棉籽粕的蛋白质体外消化性,并进一步以豆粕为对照,比较了市售高温脱酚棉籽粕、市售甲醇脱酚棉籽粕和自制脱酚棉籽粕的蛋白质体内外消化性差异,确定游离棉酚的含量与棉籽粕蛋白质消化性的平衡关系,明确脱酚处理对棉籽粕消化性的影响。结果表明:将高温棉籽粕进行甲醇处理可有效降低其游离棉酚含量(从大于1000 mg/kg降至500 mg/kg以下),并提高其消化率(从70%升至80%),但并不是游离棉酚含量越低其蛋白质消化性最高。当自制脱酚棉籽粕的游离棉酚含量在689 mg/kg时,其体内外消化率均可达90%以上,而市售甲醇棉籽粕的游离棉酚仅为364 mg/kg,但体内外消化率为82.2%~85.4%。这说明适度的脱酚处理在降低游离棉酚的同时,也有利于蛋白质消化率的提升。由此建议企业在实际的生产中,适度进行脱酚处理(约600~800 mg/kg),既可以有效保障产品的安全性,更可以提升蛋白质的消化性。
In order to clarify the effect of dephenolization on the protein digestibility of cottonseed meal,cottonseed meal with different free gossypol contents prepared by methanol dephenolization were obtained and the protein digestibility in vitro of the cottonseed meal protein were compared.Further,the protein digestibility in vivo and in vitro of commercial high-temperature dephenolized cottonseed meal,commercial methanol dephenolized cottonseed meal and self-made dephenolized cottonseed meal were compared with soybean meal as control.Thus,the balance relationship between free gossypol content and cottonseed meal protein digestibility was determined,and the effect of dephenolization on the protein digestibility of cottonseed meal was clarified.The results showed that methanol treatment of high temperature cottonseed meal could effectively reduce its free gossypol content(from more than 1000 mg/kg to less than 500 mg/kg)and improve its protein digestibility(from 70%to 80%).However,it was not that the lower the free gossypol content,the higher the protein digestibility.When the free gossypol content of self-made dephenolized cottonseed meal reached 689 mg/kg,its in vivo and in vitro digestibility could be more than 90%.While the free gossypol of commercial methanol cottonseed meal was only 364 mg/kg,and its in vivo and in vitro digestibility was 82.2%-85.4%.Which means,moderate dephenolization treatment could not only reduce free gossypol,but also improve protein digestibility.Therefore,it is suggested that enterprises should appropriately carry out dephenolization treatment(about 600-800 mg/kg)in actual production,which could not only effectively ensure the safety of products,but also improve the digestibility of protein.
