摘要
山药营养丰富,是一种食药两用农作物,对于发展农村经济有重要作用。但是山药生产具有季节性,新鲜山药水分含量在70%~80%,不易保存,所以需要对山药进行干燥处理以便储存和后续加工。近年来研究人员针对山药的干燥技术开展了大量工作,本文综述了山药干燥技术及其干燥原理,以及不同干燥方式对产品品质的影响,为山药干燥技术的应用提供参考。
Yam is a kind of edible and medicinal crops with rich nutrition.It plays an important role in developing rural economy.However,yam is seasonal with a moisture content of 70%to 80%,which is not easy to preserve,so they need to be dried for storage and subsequent processing.In recent years,researchers have carried out a lot of work on yam drying technology.This paper reviewed various yam drying technologies and its drying principle,as well as the influence of different drying methods on product quality,so as to provide reference for the application of yam drying technology.
