摘要
针对动物性海产品中镉元素超标可能引起的健康风险问题,本文查阅了2019-2021年发表的相关文献,汇总了其中报道的动物性海产品镉污染状况和镉污染风险评价方法,重点介绍了单因子污染指数评价、居民膳食安全限值评价、健康风险熵评价、目标危险系数评价等评价方法的计算公式、评价标准以及实际应用情况,并对动物性海产品中镉元素的健康风险评估结果进行归纳和总结,以探究其可能存在的食品安全隐患和人体健康风险。
To address the issue of health risks that may be caused by excessive cadmium in animal seafood,this paper reviewed the related literature published from 2019 to 2021,summarized the reported cadmium pollution situation and risk evaluation methods in animal seafood products,focusing on computational formula,evaluation criteria and actual application situation of risk evaluation methods such as single factor pollution index evaluation,margin of safety evaluation,health quotient evaluation,target hazard quotient evaluation,and summarized and concluded the health risk assessment results of cadmium in animal seafood to explore the possible food safety hazards and human health risks.
