摘要
蔬菜是人类食物中最重要的食品之一,蔬菜中农药残留超标必然会对人体健康带来危害。我国作为蔬菜生产大国和农药生产使用大国,决定我国蔬菜中农药残留问题持续存在。如何选择准确、可靠、可行的检测手段进行检测是确保蔬菜进入餐桌前相对安全的关键工序。基于此,对蔬菜中农药残留的前处理方法和主要检测技术手段进行详细阐述,重点阐述不同检测手段的原理、适用范围、优缺点等内容,其中检测手段主要包括液相色谱、气相色谱、色谱-质谱联用技术、超临界流体色谱法等大型仪器检测法,以及生物化学测定法、光谱反应法等快速检测法。研究可为检测机构在蔬菜中农残检测方法的选择上提供技术指南,又可为监管部门等有关部门在执行监管任务时提供参考依据。
Pesticide residues in vegetables are one of the most important food hazards to human health. As a large country of vegetable production and pesticide production and use, China determines that the problem of pesticide residues in vegetables continues to exist. How to select accurate, reliable and feasible detection methods for detection is the key process to ensure the relative safety of vegetables before entering the table. Based on this situation, expound in detail the pretreatment methods and main detection technical means of pesticide residues in vegetables, and focus on the principles, application scope, advantages and disadvantages of different detection methods. The detection methods mainly include liquid chromatography, gas chromatography, chromatography-mass spectrometry, supercritical fluid chromatography and other large instrument detection methods, as well as biochemical determination, spectral reaction and other rapid detection methods. This review can not only provide technical guidance for testing institutions in the selection of detection methods of agricultural residues in vegetables,but also provide reference basis for regulatory authorities and other relevant departments in the implementation of regulatory tasks.
