摘要
采用超滤法结合凝胶过滤色谱法 ,测定了鸡蛋蛋白水解产物中肽分子量的分布情况。结果表明 :鸡蛋蛋白质水解多肽分子量是连续分布的 ,分子量 10 0 0以下占 6 6 5 7%、分子量 10 0 0~ 2 0 0 0之间占 3 4 2 %、分子量 2 0 0 0~ 4 0 0 0之间占 6 2 8%、分子量 4 0 0 0~ 10 0 0 0之间占 7 73%、分子量 10 0 0 0以上占16 0 0 %。
The distribution of peptide molecular-weight in hydrolysed egg protein product has been determinated by ultrafiltration and gel filter chromatography.The results indicated that the distribution of hydrolyed peptide molecular-weight is continous and the distribution is molecular-weight under 1000 is 66 57%,between 1000 and 2000 is 3 42%,between 2000 and 4000 is 6 28%,between 4000 and 10000 is 7 73%,exceed 10000 is 16 00%
