紫色红曲霉固态发酵三七渣生产红色素的动力学研究 被引量:3

摘要 该实验在紫色红曲霉固态发酵三七渣生产红色素过程中考察了生物量、淀粉含量、总糖含量、还原糖含量、红色素色价和pH等参数随时间的变化情况,并建立了菌体生长、基质降解和产物生成的动力学模型。结果表明,菌体生长、基质降解和产物生成动力学分别适合采用对数模型、四参数对数模型、Boltzmann模型进行描述。最大菌体生物量X_(m)为0.2416 g/g发酵培养物(干基),比生长速率常数μ为0.4574 d^(-1)。最大红色素色价B_(2)为14.63 U/g发酵培养物(干基),红色素色价达到最大值一半时需要的发酵时间t_(0)=4.21 d。发酵末期发酵培养物(干基)中总糖含量D_(2)为28.84%,总糖降解的半衰期t_(50%)为3.536 d。 The changes of biomass,contents of starch,total sugar and reducing sugar,color value of red pigment,and pH with time were investigated in the red pigment production process from Panax notoginseng residues by Monascus purpureus with solid-state fermentation,and the kinetic models of cell growth,substrate degradation and product generation were established.The results showed that the kinetics of cell growth,substrate degradation and product generation could be described by logarithmic model,four-parameter logarithmic model and Boltzmann model,respectively.The maximum cell biomass X_(m) was 0.2416 g/g fermentation culture(dry base),specific growth rate constantμwas 0.4574 d^(-1),maximum color value of red pigment B_(2) was 14.63 U/g fermentation medium(dry base),and the fermentation time required to reach half of the maximum color value of red pigment t_(0) was 4.21 d.At the end of fermentation,the total sugar content in the fermentation medium(dry base)D_(2) was 28.84%,and the half-life of total sugar degradation t_(50%) was 3.536 d.
