摘要
以往的研究大多是希望通过发酵过程控制降低红曲产品中桔霉素,但实际上这条技术路线是行不通的。将基因工程技术的成果,应用于不产桔霉素红曲菌的选育,应当是可行的。本文较为系统的介绍了国内外在不产桔霉素红曲菌的筛选,基因工程菌的构建的最新研究成果。
To reduce the concentration of citrinin in red yeast rice, many people want to solve this problem by controlling fermentation process. But in fact this technology doesn't work. It is feasible to apply geneticaUy engineered technology to screening and breeding non-citrinin strains. The report here was a brief review to latest harvest of screening non-citrinin strains and designing genetically engineered microbes.
