摘要 研究氯化钠溶液添加量、磷酸添加量、氯化钠溶液质量浓度和水化温度对花生毛油脱胶效果的影响。通过单因素试验和响应面试验优化花生毛油的脱胶工艺。结果表明:最佳工艺条件为以毛油质量为基准,磷酸添加量0.4%、氯化钠溶液添加量6.5%、水化温度62℃、氯化钠溶液质量浓度0.08 g/mL,在此条件下花生毛油脱胶率为94.34%,为花生毛油脱胶工艺提供了一定的理论参考。 The effects of sodium chloride solution addition, phosphoric acid addition, sodium chloride solution mass concentration and hydration temperature on peanut oil degumming were studied. The degumming process of peanut oil was optimized by single factor test and response surface test. The results showed that the optimum process conditions were as follows: the crude oil mass was taken as the benchmark, phosphoric acid addition 0.4 %, sodium chloride solution addition 6.5 %, hydration temperature 62 ℃, and sodium chloride solution mass concentration 0.08 g/mL. Under these conditions, the degumming rate of peanut crude oil was 94.34 %. It provided some theoretical reference for the degumming process of peanut oil.
