影响葵花毛油酸法脱胶因素的研究 被引量:3

摘要 采用市售小葵花籽进行压榨制备毛油,并进行脱胶实验,对影响葵花毛油酸法脱胶中的5个影响因素进行探究。由单因素试验结果可知:葵花毛油加热温度在60℃~80℃、磷酸加入量为油重0.3%~0.6%、酸化时间20~50 min、加水量为3%~6%、水化时间在20~50 min时脱胶效果比较好。在单因素试验结果基础上设计L16(45)正交实验,对脱胶参数进行了优化。根据直观分析结果确定葵花油脱胶工艺的最佳参数为:油温65℃、磷酸加入量为0.4%,酸化时间为20 min,加水量为4%,水化时间为40 min。在此脱胶条件下,脱胶效果最好,脱胶率可达为64.45%。 The using commercially available small sunflower seeds to press crude oil,5 influencing factors on the degumming effect of sunflower oil were studied.The results of single factor test showed that the degumming effect of sunflower crude oil was better when the heating temperature was 60℃~80℃,the amount of phosphoric acid added was 0.3%~0.6%of oil weight,the acidification time was 20~50 min,the amount of water added was 3%~6%,and the hydration time was 20~50 min.Based on the results of single factor experiment,L16(45)orthogonal experiment was designed to optimize the degumming process.According to the results of visual analysis,the best parameters of degumming process of sunflower oil were determined as follows:oil temperature 65℃,phosphoric acid addition 0.4%,acidification time 20 minutes,water addition 4%,hydration time 40 minutes.Under this condition,the degumming effect is the best,and the degumming rate is 64.45%.
