摘要 我国的饮食文化历史悠久,“民以食为天”反映出人们对于食品质量和食品营养的关心。我国的饮食文化经历了原始人的生食到现代智人的熟食等不同的阶段,随着历史的变迁,人们对于食物的追求开始从吃饱变为吃好,由追求美味到追求营养和健康。饮食文化的变化反映出社会条件尤其是经济条件的改善,我国食品烹饪技术和其他国家相比较为明显的差异就是药食同源,这反映出古代饮食文化注重色香味,更注重营养的特色。 China’s food culture has a long history,“Food for the people” reflects the people’s concern for food quality and food nutrition.Chinese food culture has gone through different stages,such as the raw food to the cooked food of modern homo sapiens.With the change of history,people’s pursuit of food began to change from full food to good food,from the pursuit of delicious food to nutrition and health.The change of food culture reflects the growth of social conditions,especially economic conditions.Compared with other countries,China’s food cooking technology has an obvious difference,that is,the same origin of medicine and food,which reflects the characteristics of ancient food culture that pays attention to color and fragrance and pays more attention to nutrition.
