摘要
以采自福建省南平市、浙江省衢州市开化县、广西壮族自治区柳州市融安县的杉木(Cunninghamia lanceolata(Lamb.)Hook.)木材为试材,应用静态顶空-气相色谱-质谱联用技术(HS-GC-MS)、固态微萃取前处理结合气相色谱-质谱-嗅闻联用技术(GC-MS-O),分析杉木心材中挥发性成分及其中气味物质种类,筛选对杉木中挥发性成分的影响因素以及杉木中具体的发香物质。结果表明:木材取样高度、产地、树龄明显影响杉木心材中部分挥发性成分的相对量,但不同条件下杉木心材中挥发性物质种类基本一致。随树龄增加,杉木心材挥发物中骨架碳数为10的单萜、酚类及酯类物质和部分倍半萜及二萜类物质的相对量上升。杉木心材中可鉴别出的发香成分有16种,低温下易被感知的气味物质主要是分子骨架为10个碳原子的含氧单萜化合物和15个碳原子的非含氧倍半萜物质。分子式为C_(15) H_(26)O的倍半萜成分逸出温度较高,且对杉木心材气味也有较大的影响。
With Cunninghamia lanceolata(Lamb.)Hook woods from Nanping,Fujian Province,Kaihua,Quzhou,Zhejiang Province and Rong’an,Liuzhou,Guangxi Zhuang Autonomous Region of China,the influence factors of volatile components and flavoring substance of Chinese fir heartwood were clarified through static headspace-gas chromatography-mass spectrometry(HS-GC-MS)and headspace solid-phase microextraction followed by gas chromatography-mass spectrometry-olfactometry(GC-MS-O)analyses.The relative content of volatile components of Chinese fir heartwood was significantly influenced by the sampling height,origin and tree age.However,the types of volatile compounds in heartwood of Chinese fir were basically the same under different conditions.With the increase of tree age,the relative contents of monoterpenes,phenols and esters with 10 carbon-skeleton were increased.Parts of sesquiterpene and diterpenoid in the volatile matter of Chinese fir wood were also increased in this phenomenon.There were 16 kinds of flavoring substance in the heartwood of Chinese fir.The main odorants that were easily perceived at low temperature were oxygen-containing monoterpenes with 10 carbon atoms and non-oxygenated sesquiterpenes with 15 carbon atoms.The sesquiterpenoids with the molecular formula of C_(15) H_(26) O were easy to escape under high temperature,and they also effected the odor of Chinese fir heartwood.
