摘要 食品科学与工程专业主要研究食品营养健康、工艺设计、食品加工贮藏及食品安全,这些课程是连接食品科学与工程的重要枢纽。针对现有本科教学模式的弊端,为提高教学质量、培养创新型及应用型食品专业人才,通过项目教学法,设计新的培养方案,丰富教学模式,完善考核评价内容、方式等方面不断进行改革探索,激发学生的学习兴趣,锻炼学生的自主思考能力,进而提升教学效果,培养食品科学与工程行业的合格应用型人才。 Food science and engineering majors mainly study food nutrition and health,process design,food processing and storage,and food safety. These courses are an important hub connecting food science and engineering. However,the disadvantages of the existing undergraduate teaching model are gradually emerging. In order to improve the quality of teaching and cultivate innovative and application-oriented food professionals, this article aimed at the problems existing in the traditional talent training process,through the project pedagogy,enricheed the teaching mode,perfected the content and methods of assessment and evaluation. Continuously carry out reforms and explorations, stimulate students’ interest in learning, exercise their independent thinking ability,and then improve teaching effects,and cultivate qualified and applied talents in the food science and engineering industry.
