摘要
选择2个立筒钢板仓为试验仓,设定温度分别为18、22℃,以常温成品库为对照仓,进行散装大米的低温储藏试验。结果表明:在13个月储藏时间内,2个试验仓水分缓慢下降,变化趋势基本一致,成品库大米水分变化波动较大;试验仓和对照仓的脂肪酸值均呈上升趋势,成品库进入夏季后脂肪酸值上升加快;试验仓大米的综合食味值变化不明显。2个不同温度的试验仓对延缓大米品质变化差异不明显。
Two steel plate silos were selected as test silos and the set temperatures were 18℃and 22℃,respectively.The low temperature storage experiment of bulk rice was carried out with the normal temperature finished product silo as the control silo.The results showed that during the storage period of 13 months,the moisture content of the two test silos decreased slowly and the change trend was basically the same,the moisture content of rice in the finished product silos fluctuated greatly,the fatty acid value of the test silos and the control silos showed an increasing trend,the fatty acid value of rice in the finished product silos increased quickly in summer and the comprehensive taste value of rice in the test silos did not change obviously.There was no significant difference in delaying rice quality change between two test silos with different temperature.
