摘要
选取华南地区大米作为实验材料,探究了准低温储藏覆膜储粮技术对大米的品质变化影响。研究表明,无论大米堆是否采用覆膜,其平均粮温和最高粮温下降趋势基本相同,且与入粮时的基础粮温有紧密联系。采用准低温储藏覆膜方法,实验大米的脂肪酸值上升幅度小,品尝评分值基本无变化,实验大米的水分下降幅度是未采用该方法大米的50%。在准低温储藏覆膜的条件下,大米堆温度维持在16℃左右,害虫不易生长繁殖,实验大米堆和对照大米堆均可较长时间维持无虫状态。该方法适用于华南地区大米储藏,可延缓大米品质和提高企业经济效益。
In this paper,rice in South China was selected as the experimental material to explore the impact of quasilow-temperature film-coated grain storage technology on grain quality changes.Studies have shown that regardless of whether the rice pile was covered with a film,the average grain temperature and the maximum grain temperature had basically the same downward trend,which was closely related to the basic grain temperature when entering the grain.After adopting the method of quasi-low temperature mulching grain storage,the fatty acid value of the experimental rice had a small increase,the tasting score was basically unchanged,the pests were not easy to grow and reproduce,and the water drop rate of the rice was half that of the rice without this method.Under the condition of quasi-low temperature storage and mulching,the temperature of the rice pile was maintained at about 16℃,and the pests were not easy to grow and reproduce.Both the test rice pile and the control rice pile can maintain a pest-free state for a long time.Through our experimental exploration,this method was suitable for rice storage in South China,which can delay the change of rice quality and improve the economic benefits of enterprises.
