日粮添加厚朴酚对临武鸭肌肉营养成分和肌纤维结构特性的影响 被引量:1

摘要 为探究日粮添加不同水平厚朴酚对临武鸭肌肉营养成分和肌纤维肌肉特征的影响,试验将275羽试鸭分为5个处理组,分别饲喂0、100、200、300 mg/kg厚朴酚和300 mg/kg抗生素,并测定胸肌和腿肌的常规养分含量、丙二醛含量、氨基酸组成以及肌纤维形态结构等指标。结果表明:日粮添加厚朴酚使胸肌粗蛋白质含量有提高趋势(0.05<P<0.1),并降低了丙二醛含量;厚朴酚的添加可显著提高腿肌中多种风味氨基酸和必需氨基酸的含量(P<0.05);日粮添加厚朴酚能显著降低胸肌肌纤维直径(P<0.05),显著提高胸肌和腿肌的纤维密度(P<0.05)。可见,日粮添加厚朴酚可以提高临武鸭肌肉的营养价值与嫩度,抑制氧化,改善风味,为厚朴酚替代抗生素来提高肉品质提供了理论依据。 To investigate the effects of dietary magnolol on meat quality and muscle fiber characteristics of Linwu duck,a total of 275 ducks were assigned to 5 groups with 5 cages of 11 ducks each and fed diets supplemented with 0,100,200,300 mg/kg of magnolol and 300 mg/kg of antibiotic for 3 weeks,respectively.The conventional nutrient composition,malondialdehyde(MDA)content,amino acid composition and muscle fiber development in breast and leg muscle were evaluated.Results showed that the content of crude protein in breast muscle were remarkably improved(0.05<P<0.1),while the MDA content were decreased with the addition of magnolol;The addition of magnolol significantly increased the percentage of flavor amino acids and essential amino acids in leg muscle(P<0.05);The breast muscle fiber diameter were significantly decreased in magnolol group while the density of breast muscle fiber were significantly increased.Meanwhile,the density of leg muscle fiber was significantly increased in magnolol group.Taken together,magnolol was an effective feed additive to improve muscle nutritional value and tenderness,inhibit oxidative stress and enhance flavor of Linwu duck muscle,which may provide theoretical foundation for research aiming to improve meat quality.
