摘要
野生食用菌是一类重要的野生生物资源,因其具有丰富的营养价值而受到大众的青睐。近年来,随着野生食用菌产业迅猛发展,野生食用菌相关的基础研究引起了国内外研究者的广泛关注。通过对1999年~2020年5月国内发表的野生食用菌营养成分测定的相关文献进行整理,分类统计野生食用菌相关营养成分和重金属等含量特征;列举了野生食用菌的主要测定与评价方法;从野生食用菌采摘等管理制度、野生食用菌样品测定分析方法标准体系、野生食用菌特殊营养成分的提取与加工以及野生食用菌营养价值综合评价体系等方面进行了展望。
Wild edible fungi are a sort of important wildlife resources, which are favored by the public because of its rich nutritional value. In recent years, with the rapidly develop of wild edible fungi industry, the basic research on wild edible fungi has attracted extensive attention by researchers at home and abroad. Through sorted out the relevant literature on the determination of the nutrient composition of wild edible fungi published in China from 1999 to May 2020, classified and counted the characteristics of the nutrient composition and heavy metal content of wild edible fungi, listed the main determination and evaluation methods of wild edible fungi. The management system such as picking, the standard system for the determination and analysis of wild samples, the extraction and processing of special nutrients of wild edible fungi, and the comprehensive evaluation system for the nutritional value of wild edible fungi are prospected.
