摘要
己酸功能菌液对于浓香型白酒人工窖泥的生产起着至关重要的作用。本文主要对己酸功能菌养窖液中的关键指标进行相关性分析,并结合乳酸添加实验研究乳酸-己酸之间代谢途径。证实了功能菌养窖液中存在乳酸-乙酸-丁酸-己酸之间的代谢关系,并且伴随着乳酸的添加,显著提高了功能菌养窖液中己酸累积量。该研究为促进人工窖泥快速老熟,改进人工窖泥的生产工艺提供全新的理论依据和发展方向。
Functional caproic acid-producing bacteria liquid plays a vital role in the production of artificial pit mud for Nongxiang Baijiu.This article analyzes the correlation between the key indicators in the functional bacterial liquid,and studies the metabolic pathway between lactic acid and caproic acid through lactic acid addition experiment.It is confirmed that there is a metabolic relationship between lactic acid,acetic acid,butyric acid and caproic acid in the functional bacteria liquid,and with the addition of lactic acid,the cumulative amount of caproic acid in the functional bacteria liquid is significantly increased.This research provides a new theoretical basis and development direction for the rapid maturation of artificial pit mud and the improvement of its production process.
