摘要
樱桃红色素是一种水溶性色素,属于花青素类,主要来源于樱桃皮渣。本文分析了樱桃红色素的提取纯化方法、提取条件优化及其稳定性的影响因素,总结了樱桃红色素的功能。在此基础上,概括了当前研究存在的问题,展望了樱桃红色素的发展趋势及应用前景,提出了合理化建议,为樱桃加工副产品的综合利用及天然食用红色素的深入开发提供参考。
Cherry red pigment is a water-soluble pigment which belongs to the anthocyanin class,mainly derived from cherry peel residue.In this paper,the methods of extraction and purification of cherry red pigment,the optimal conditions of extraction,and the factors affecting its stability were analyzed and summarized.On this basis,the problems existing in the current research were analyzed,the development trend and application prospect of cherry red pigment were prospected,and reasonable suggestions were put forward,which provided theoretical reference for the comprehensive utilization of cherry processing by-products and the in-depth development and extensive utilization of natural edible red pigment.
