摘要
为深入了解莱芜猪的肉质特性,研究系统测定了42头莱芜猪和30头杜长大的pH、滴水损失、肌内脂肪(Intramuscular fat,IMF)含量等肉质性状,并对各性状进行群体间比较和性状间相关性分析。两群体比较结果表明,莱芜猪的pH(pH_(1)和pH_(24))、L_(1)、a_(1)、b_(1)、a_(24)、b_(24)、IMF含量均极显著高于杜长大(P<0.001),风干水分含量和肌纤维直径均极显著低于杜长大(P<0.001),滴水损失和L_(24)与杜长大差异不显著。相关分析结果表明,莱芜猪的pH_(1)与pH_(24)呈显著正相关(P<0.05),而杜长大的pH_(1)与pH_(24)呈弱正相关。莱芜猪pH_(1)和pH_(24)与风干水分含量均呈显著负相关(P<0.05),而杜长大的pH_(1)与滴水损失、L_(1)、a_(1)、b_(1)、L_(24)和a_(24)均呈显著负相关(P<0.05、P<0.01、P<0.001),pH_(24)与其它肉质性状相关性均较弱。莱芜猪的滴水损失与L_(1)值呈显著正相关(P<0.05),与a_(1)和a_(24)呈显著负相关(P<0.001),而杜长大的滴水损失则与L_(1)、a_(1)、b_(1)均呈显著正相关(P<0.001)。莱芜猪的IMF含量与肉色指标均呈显著正相关(P<0.05、P<0.01、P<0.001),而杜长大的IMF含量只与肉色中的a_(24)、b_(24)呈显著正相关(P<0.01、P<0.001)。研究揭示莱芜猪的许多肉质性状与杜长大存在大的差异,研究结果对两群体今后的肉质遗传改良提供了参考。
In order to deeply understand the meat quality characteristics of Laiwu pigs,the pH value,drip loss,intramuscular fat(IMF)content and other meat quality traits of 42 Laiwu pigs and 30 Duroc×Landrace×Yorkshire pigs(DLY)were systematically measured,and the comparison between the two populations and the correlation among the meat traits were analyzed.The comparison results showed that the pH value(pH_(1)and pH2),meat color(L_(1),a_(1),b_(1),a_(24)and b_(24))and IMF content of Laiwu pigs were significantly higher than those of DLY pigs(P<0.001),and the air-dried moisture content and muscle fiber diameter were significantly lower than those of DLY pigs(P<0.001).There was no significant difference in drip loss and meat color L_(24)between Laiwu pigs and DLY pigs.The results of correlation analysis showed that there was a significant positive correlation between pH_(1)and pH_(24)in Laiwu pigs(P<0.05),while there was a weak positive correlation between pH_(1)and pH_(24)in DLY pigs.pH_(1)and pH_(24)of Laiwu pigs were significantly negatively correlated with air dried moisture content(P<0.05).However,pH_(1)of DLY pigs was significantly negatively correlated with drip loss,L_(1),a_(1),b_(1),L_(24)and a_(24)(P<0.05,P<0.01 or P<0.001),and pH_(24)was weakly correlated with other meat quality traits.The drip loss of Laiwu pigs was significantly positively correlated with L_(1)value(P<0.05)and negatively correlated with a_(1)and a2 value(P<0.001),while the drip loss of DLY pigs was significantly positively correlated with L_(1),a_(1)and b_(1)values(P<0.001).The IMF content of Laiwu pigs was significantly positively correlated with all the meat color index(P<0.05,P<0.01 or P<0.001),while DLY pigs was only significantly positively correlated with the a_(24)and b_(24)values of meat color(P<0.01 or P<0.001).This study revealed that there were great differences in many meat quality traits between Laiwu pig and DLY pigs.The results provided references for the genetic studies and breeding of the two populations in the future.
