摘要
以鸡腿菇、高粱、大曲为原料酿造鸡腿菇醋,研究其酿制过程中多糖、总黄酮、总酚含量以及体外降血糖功效的动态变化。结果表明,鸡腿菇醋各项理化指标均达到GB 18187—2000《酿造食醋》的要求,在鸡腿菇醋酿制过程中多糖和总黄酮含量、α-葡萄糖苷酶和α-淀粉酶抑制率呈先上升后下降的趋势,总酚含量呈逐渐上升的趋势。多糖、总黄酮、总酚含量分别在在酒化结束时、醋化第3天、熏醅结束时达到最大值,含量分别为(6.77±0.04)mg/mL、(244.51±3.93)mg/100 g及(1.757±0.01)mg/mL。α-葡萄糖苷酶抑制率在鸡腿菇醋中达到最大值为(95.8±1.0)%,α-淀粉酶抑制率在醋化结束时达到(86.4±1.1)%。α-葡萄糖苷酶抑制率与总黄酮极显著相关(P<0.01),与总酚显著相关(P<0.05)。α-淀粉酶抑制率与总酚极显著相关(P<0.01),与多糖显著相关(P<0.05)。
Coprinus comatus vinegar was brewed with C.comatus,sorghum and Daqu as raw materials,and the dynamic changes of polysaccharide,total flavonoids,total phenolics and in vitro hypoglycemic effect were studied during the brewing process.The results showed that the physicochemical indexes of C.comatus vinegar reached the requirements of GB 18187—2000 brewing vinegar.During the brewing process,the contents of polysaccharides and total flavonoids,the inhibition rates ofα-glucosidase andα-amylase increased first and then decreased,and the total phenols content increased gradually.The contents of polysaccharides,total flavonoids and total phenols reached the maximum at the end of alcoholic fermentation,the third day of acetic fermentation and the end of fumigation,respectively,and the contents were(6.77±0.04)mg/ml,(244.51±3.93)mg/100 g and(1.757±0.01)mg/ml,respectively.The maximum inhibition rate ofα-glucosidase in C.comatus vinegar was(95.8±1.0)%,and the maximum inhibition rate ofα-glucosidase was(86.4±1.1)%at the end of acetic fermentation.The inhibition rate ofα-glucosidase was highly significantly correlated with total flavonoids(P<0.01)and significantly correlated with total phenol(P<0.05).The inhibition rate ofα-amylase was highly significantly correlated with total phenols(P<0.01)and significantly correlated with polysaccharides(P<0.05).
