摘要
大曲糖化力是评价大曲质量的一项重要指标,但常规所采用的斐林试剂滴定法影响因素较多。采用3,5-二硝基水杨酸作为指示剂,并对测定波长、加热条件进行优化,建立了一种糖化力的快速检测方法,本方法快速准确科学,可用于大曲糖化力的检测及应用。
The saccharifying power of Daqu is an important index to evaluate the quality of Daqu, but there are many influencing factors in the conventional method of Fehling Reagent Titration. In this paper, 3,5-Dinitrosalicylic acid was used as indicator, and the determination wavelength and heating conditions were optimized to establish a rapid detection method of saccharifying power.This method is rapid, accurate and scientific, and can be used for the detection and application of saccharifying power of Daqu.
