摘要
霉菌毒素是霉菌的高毒性次级代谢产物,具有抗营养作用,经常会在饲料的制作、运输和贮存过程中产生。这些霉菌毒素可以通过饲喂动物或者是人类进食畜产品时进入人体和动物的体内,导致人类和动物的急性或慢性中毒,损伤机体的肝脏、肾脏、神经组织、造血组织及皮肤组织等。常见的霉菌毒素有黄曲霉毒素、玉米赤霉烯酮、赭曲霉毒素、呕吐毒素等。文中主要叙述了赭曲霉毒素和黄曲霉毒素,以及传统发酵菌株乳酸菌应用于饲料中降解霉菌毒素,有效抑制饲料中霉菌毒素的产生,代替化学防腐剂的作用。
Mycotoxin is a highly toxic secondary metabolite of mold,which has anti-nutritional effect and is often produced in the process of making,transporting and storing feed.These mycotoxins can enter the body of human body and animals through feeding animals or when humans eat animal products,resulting in acute or chronic poisoning of humans and animals,damage to the body's liver,kidney,nerve tissue,hematopoietic tissue and skin tissue.Common mycotoxins include aflatoxin,zearalenone,ochratoxin and vomitoxin.This paper mainly described ochratoxin and aflatoxin,as well as the application of lactic acid bacteria strains of traditional fermentation to degrade mycotoxin in feed,effectively inhibit the production of mycotoxin in feed and replace the role of chemical preservatives.
