摘要
目的:PG、BHT是食用油常用的抗氧化剂,本研究基于PG、BHT的电化学性质,探讨建立一种新型的油脂中抗氧化剂添加量快速测定方法。方法:以Nafion修饰玻碳电极作为工作电极,以LiClO 4乙腈溶液作为电解质,采用微分脉冲溶出伏安扫描测定法(DPV)测定其含量与峰电流的关系。结果:PG在3.3×10^(-5)~1.65×10^(-4)mol/L、BHT在1.32×10^(-4)~3.3×10^(-4)mol/L内加入量与氧化峰电流呈良好的线性关系。结论:在一定浓度范围内通过电化学方法测定油脂抗氧化剂含量的方法是可行的。
Objective PG and BHT are common antioxidants used in cooking oils.Basing on electrochemistry nature of PG and BHT,the study attempted to found a new quick determining method of antioxidant additive account in oil.Method We made GC electrode modified by Nafion,used LiClO 4-CH 3CN as electrolyte,and did quantitative analysis by DPV.Result We got separately the good linear relation between concentration and peak current during 3.3×10^(-5)~1.65×10^(-4)mol/L of PG,and 1.32×10-4~3.3×10^(-4)mol/L of BHT Conclusion It is feasible to determine the antioxidant content of oil by electrochemical method in a certain concentration range.
