贮藏时间对新疆干制‘灰枣’品质的影响 被引量:1

摘要 灰枣是新疆特色林果产品之一。为提升新疆干制‘灰枣’商品性,特开展不同贮藏时间对新疆干制‘灰枣’品质影响的研究。采用新疆较为常用的贮存方式,在温度-2~5℃、湿度40%~45%条件下,采用Folin-酚法、出口食品总黄酮测定、常规理化指标测定等方法,测定不同贮存时间干制‘灰枣’的总多酚、总黄酮、总糖、总酸、还原糖等指标。结果表明,总多酚和总黄酮含量整体变动幅度较小,贮存45 d时达到最高值,分别为10.7 mg/kg、1.05%;脂肪、蛋白质、水分、总酸含量随着贮存时间的延长呈上升趋势,贮存60 d时达到最高值;总糖、还原糖、淀粉、膳食纤维含量呈先增长后降低的趋势,贮存30 d时含量最高。新疆干制‘灰枣’最佳商品期为入库贮存后的30~60 d。 ‘Grey Jujube’is one of the characteristic fruit products in Xinjiang.In order to improve the commodity of dried‘Grey Jujube’in Xinjiang,the effect of different storage time on the quality of dried‘Grey Jujube’in Xinjiang was studied.Using the commonly used ones are stored in Xinjiang,the storage temperature-2~5℃,humidity under the condition of 40%~45%,the Folin-phenol method,export food methods of determination of total flavonoids and conventional physical and chemical indexes,the determination of different storage period of dried‘Grey Jujube’total polyphenols,flavonoids,total sugar,total acid,reducing sugar and other indicators.The result show that,the content of total polyphenols and total flavones fluctuated slightly and reached the maximum value of 10.7 mg/kg and 1.05%respectively on 45 d storage.The content of fat,protein,water and total acid increased with the extension of the storage time,and reached the maximum value at 60 d.The content of total sugar,reducing sugar,starch and dietary fiber increased first and then decreased,and the content was the highest at 30 d.The best commodity period ofdried‘Grey Jujube’in Xinjiang is 30~60 d after storage.
