摘要
采用冷冻干燥后的斑点叉尾鮰鱼下脚料为原料,以斑点叉尾鮰鱼下脚料的蛋白提取率为指标,考察液料比(w/v)、碱提温度及碱提pH对提取率的影响,在单因素实验的基础上,采用响应面法确定斑点叉尾鮰鱼下脚料蛋白的最优提取工艺.结果表明,提取斑点叉尾鮰鱼下脚料蛋白的最优条件为液料比1∶20、碱提pH 11.4、碱提温度38℃,在此优化工艺条件下斑点叉尾鮰鱼下脚料蛋白的实际提取率达82%±0.34%.
Using byproducts of Channel catfish as research object,the effect of material/liquid ratio(w/v),the pH of alkaline extraction and the temperature of alkaline extraction on the extraction rate were investi⁃gated.The optimal conditions were found as follows:the ratio of material to liquid(w/v)was 1∶20,alkali extraction pH 11.4 and the temperature was 38℃.Under this conditions,the extraction rate of protein ex⁃traction from byproducts of Channel catfish was 82%±0.34%.
