摘要 表面增强拉曼光谱技术是一种新型的无损分析技术,自发现以来备受关注,已逐步发展为一种具有广泛应用前景的分析检测技术,在快速分析食品安全方面有很大的应用潜力.该文概述了表面增强拉曼光谱技术在食品添加剂,如防腐剂、增白剂、着色剂、甜味剂和抗氧化剂测定的应用进展,并对未来的发展前景进行了展望. Surface enhanced Raman spectroscopy is a new non-destructive analysis technology,which has attracted much attention since it was found.Because of its advantages of short reaction time,high sensitivity,simple operation,small number of samples required and low detection limit,it has gradually become a widely used analytical technology,and has great potential in rapid analysis of food safety.In this paper,the detection items of preservatives,brighteners,colorants,sweeteners and antioxidants in food by surface enhanced Raman spectroscopy are summarized,the application progress is briefly described,and the future development prospect is prospected.
