摘要
植物源活性肽是一类来源于植物蛋白质的肽化合物,其安全性高、加工性能好且功能活性显著,具有抗氧化、降血脂、免疫调节和抗胆固醇等多种生理功能。研究植物源活性肽对开发新食品、增加农副产品价值有重要意义。本文综述了近5年国内外有关植物源活性肽的研究进展,包括常见种类、制备方法、分离鉴定以及研究方向,总结了相关功能肽的应用现状,并对今后的研究及开发利用方向进行了展望,指出植物源活性肽的研究重点可集中在高效制备、风味特征以及体内作用机理,以便能进一步实现生物活性肽的商业化生产。
Plant-derived peptides are a class of peptide compounds derived from plant proteins,which have high safety,good processing performance and significant functional activity.They have many physiological functions,such as anti-oxidation,lowering blood lipid,immune regulation and anti-cholesterol.The study of plant-derived peptides is of great significance for the development of new food and the value of agricultural by-products.The research progress of active peptides derived from plants in recent five years at home and abroad were reviewed in this paper,including common types,preparation methods,isolation,identification and research direction.The related function peptide application present situation was summarized,and the future research,development and utilization were prospected.The paper pointed out that the focus of domestic research on plant-derived active peptides could be focused on the high-efficiency preparation,flavor characteristics and in vivo action mechanism,so as to further realize the commercial production of biological active peptide.
